Peanut butter slice

2 cups desiccated coconut
1 (good sized) cup Boasted Peanut Butter
1/3 cup melted coconut oil (add more if needed)
4 Tbsp honey or other sweetener
1 tsp vanilla essence
Chopped roasted peanuts

  • Blend coconut in food processor until smooth

  • Add coconut oil, peanut butter, honey and vanilla essence then blend until combined

  • Pour into a lined slice tin

  • Top with chopped peanuts

  • Freeze

  • Eat!

Once set, can be left in the fridge. Goes well as a wee after dinner treat!
